Formerly made by farmers for domestic use, Tomme de Savoie is the oldest cheese of Savoie. To recognize it, it is marked "Savoie" on the sides. Documents as early as in 1650 mention this iconic cheese. In 1793, you could already find it on the stalls of the merchants. Originally, it was a low-fat cheese because the milk had been skimmed to make the butter. The tomme containing more fat was more appreciated by the Savoyards because of its rarity.
