Product: Crottin de Chavignol is made with whole goat’s milk and has a hard-natural rind covered in mould that can be pale ivory to soft white or pale blue-gray.
Made with milk from the alpine brown goats that frolick between the Loire and the wide plains of the Berry region, it gets its unique properties from the rich and varied vegetation eaten by the goats.
Our Crottin de Chavignol is firm and becomes crumbly as it matures. It has a pungent goaty smell and tastes slightly sour and sweet. Its nutty flavours become more pronounced with maturity. This cheese might be packed with herbs in jars of green local olive oil.
The label is protected granting the cheese tradition and quality since 1976, Appellation d'Origine Contrôlée.
